Xuma Restaurant on Highbourne Cay

Five or Six years ago we met Chef Cory at Highbourne while I was on a run in the Highbourne Hauler to Normans Cay. Cory was a young Chef and I had a nice conversation with him on our back to Highbourne. That evening he hooked us up with a special meal that hadn’t made the menu yet.

Wow, ever since then Xuma has been our favorite restaurant in the Bahamas bar none.

Tuna Tartar that even Beth will eat!!

Tonight Cory didn’t disappoint. Tuna Tartar to start and then the Wednesday special rack of Lamb. Follower by a Chocolate Brownie with berries and vanilla ice cream.

Now that’s a rack of lamb

It was great way to spend our last evening in the Bahamas.

    Highbourne was always our favorite stop of the entire Bahamas. Joy and Joel were friends. She told him once that it was Gods country. Joel told her it was where God went for vacation.
